This depends a bit on the size of boat and what you are wanting to gain from the glass. In most of the boats that I do, the glass is just a backup offering abrasion resistance to the bottom, protecting the wood from gouging.
As an example on Miss Isle I used one layer of 200g plain wave glass cloth which I think I overlapped at the keel giving a double layer for a section maybe 3 inches either side of the keel.
