Wakeboard refinish

Hi, new to the group although Dan did advise me sometime ago on a model boat varnish tips. 
Sadly, not building a boat, too many other projects but I do need to refinish a wake board. It has a wood inlay and the original coating has now worn off except where there were stickers or foot binding plates. The original coating is very hard. I suspect it may have been an epoxy type coating over the wood inlay. 
I will attempt to gently sand the remainder of the coating off, but my question is what should I use to recoat it? Single stage varnish or maybe an epoxy ?… I did think about using an acrylic clear coat as used in cars?

I would probably recommend going with a two part clear here, epoxy is likely not needed. Something like the Epifanes polyurethane clear would be a good fit I would say.
