Staining process and products?

I'm about to start applying my large Okoume mahogany 1/4 inch thick marine plywood panels on my Glen L boat project.

One of the things I need to do is butt two panels together with a backing block which will be epoxied and screwed on the back side of the two panels.

Question #1 - I'm wondering if I should stain the panels before attaching them together for fear that some epoxy will bleed through the gap in the panels and seal the wood such that I can't get stain to take on that spot and it creates a different colour spot?

 

Question #2 - Is Epifanes Dutch Mahogany stain the right product to put over Okoume plywood for a traditional look?   My plan is to put fibreglass and several coat of West Systems Epoxy over top as well coats of varnish.

My usual approach in this scenario is to mask up the show face of the plywood before glue up. You can see me do it here at around 12:35 https://www.youtube.com/watch?v=fxdTGRys4GU&t=4s

I later cleaned up the glue line with a scraper before moving on to stain etc. 

The Epifanes mahogany stain is a nice colour and will be fine over Okoume plywood. 

Are there certain types of stains NOT TO USE?    Oil base vs Water base ect?

 

It depends a little on what finish system you are overcoating with. My overarching advice though is to do a full test before starting. Stain and build a good volume of coats over the top to fully test the system and check the colour.
